From out of nowwhere, i am receiving lots of chinese traffic.

sure, you can check detailed stats for each trade separately, just click on 'Detailed stats' link (click first at 'More' icon at 'Tools' column in the overal stats.)

yes, use 'redirects settings', under 'Out settings'.

when they CLICK on something.

to block them on load use htaccess(http://www.countryipblocks.net/) althrough I do not recommend it since bandwidth is VERY cheap nowadays!
